Very little is known about the dahlia prior to the time of the Aztecs. We do know that the Aztecs enjoyed the flowers for more than their beauty above ground... They ate the sweet dahlia roots. They were even brought from Mexico to Europe as a food crop in the 1600s! ⛵️

Today Swiss nursery #Lubera has been growing dahlias in order to find the best tasting tubers. Lubera recommends peeling the young tubers, then cooking them as you would potatoes. . 📷: @lizpeartree
